Two zodiacs, two starting lines
Western astrology uses the tropical zodiac: 0° Aries is defined as the moment of the spring equinox, the point where the Sun crosses the celestial equator each year. Vedic astrology uses the sidereal zodiac: 0° Aries is anchored instead to the fixed background of stars. Roughly two thousand years ago the two zodiacs lined up almost exactly. Why your Vedic sign is usually one back from your Western one
Since the current ayanamsa is a little over 24° — most of the way through a 30° sign — most people's sidereal sign sits one sign behind their tropical one. A lifelong Western Leo is, very often, a Vedic Cancer. This is not a mistake in either system and it is not evidence that one zodiac is "more accurate" than the other: tropical and sidereal astrology are simply measuring from different reference points, each internally consistent on its own terms, and asking a different question about the sky.

This is exactly why any serious astrology software should state which ayanamsa it uses: without that, a printed chart position cannot be fully trusted or reproduced.
Sidereal, tropical, and the rest of the chart
The choice of zodiac affects every graha's sign and nakshatra placement, and everything built on top of those — house lordship, dignity, dasha calculations tied to the Moon's nakshatra, and more. It does not change the underlying astronomical positions of the planets themselves, only which 30° slice of sky each position is said to fall into. Two pieces of software computing the same birth moment in the same zodiac, with the same ayanamsa, should agree on sign placements to the degree; disagreement almost always traces back to a different ayanamsa choice, not an error in either engine.
A worked example
Say a tropical (Western) calculation places the Sun at 8° Leo for a given birth moment. Nothing about the Sun's actual position in the sky changed between the two numbers; only the ruler used to mark off "zero" moved.
